1 1/2 pounds zucchini, peeled and sliced
1/2 cup butter
2 tablespoons olive oil
1 cup low-fat cottage cheese
1 cup sour cream
1 cup shredded Cheddar cheese
1/2 cup dry bread crumbs
1/2 cup cornmeal
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
In a medium bowl, mix together butter, olive oil and cottage cheese. In a separate bowl, mix together sour cream, Cheddar cheese, bread crumbs and cornmeal. Sprinkle half of cottage cheese mixture into one half of the pan.
Bake in the preheated oven for 20 to 25 minutes, or until a knife inserted into the center comes out clean.
