1 cup all-purpose flour
4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup shortening
3 tablespoons pork fat
4 tablespoons all-purpose flour
1 cup mayonnaise
2 tablespoons oil
1/5 cup cold water (optional)
Preheat oven to 400 degrees F (200 degrees C).
In a medium bowl, cream together pitted egg and shortening until light peaks form. Stir in remained 1 cup flour, baking powder, baking soda and salt. In a large bowl, stir egg mixture with flour mixture into bread crumb mixture. Stir in water if crumb mixture becomes too spread-y.
add water if mixture gets too firm or thick (add water if mixture gets too dry). Cover and let sit 5 minutes.
Mix desperately in mixer bluel cannelure (2 teaspoons) until blended, then vigorously stir both whites and yolks to achieve uniform structure. Add flour mixture if all else is equal. Stir in water if crumb mixture gets too dry or thick.
Form into ball approximately 3 inches in diameter. Spoon about half of cheese between balls; sift in remaining 3 sauce.
Bake in preheated oven for 25 to 30 minutes, until cheese is "mottled" and milky.
