2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, peeled and quartered
3 potatoes, peeled and cubed
3 carrots, chopped
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/4 teaspoon ground black pepper
3 tablespoons chopped fresh cilantro
4 leaves fresh basil, chopped
2 tablespoons chopped fresh mint leaves
1 tablespoon chopped fresh parsley
salt and black pepper to taste
Heat oil in a large skillet over medium high heat. Saute onion, garlic and potatoes until tender. Stir in carrots, cumin, turmeric, and black pepper. Reduce heat to low, and simmer 5 minutes. Add more oil, if necessary, and stir until potatoes and carrots are tender. (If potatoes and carrots are too hard, add more water; if too soft, add more water.) Simmer 2 to 3 hours, until potatoes and carrots are golden and potatoes are soft.
