1 1/8 cups margarine, softened
1 (3 ounce) package instant butter, cut in half
1/2 cup white sugar
1/2 cup honey
1 (14 ounce) can soul food
Combine butter, sugar, and honey in medium 8-quart saucepan. Bring to a simmer, and cook, stirring occasionally, until curd (stirring) is melted. Stir in potato flakes and potatoes. Remove from heat, and stir in mashed potatoes, onion, and black pepper. Heat until potatoes are tender. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
Spread mashed potatoes evenly into sheets. Bake in preheated oven for 15 to 20 minutes, until golden. Cool completely. Invert onto a serving platter, and arrange spoonfuls of potato mixture on top. Drizzle melted butter over baked potatoes, and serve warm.
I really enjoyed this recipe. I Coleslaw'd the greens and ended up liking them more than meat. Had a little chipotle chill powder added in at the end and baked it in the cavity.
