1 cup apples - peeled, cored, and quartered
1 cup white sugar
1 egg, beaten
1/4 cup golden syrup
1/2 teaspoon ground cinnamon
Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium muffin pan or line with foil. In a double boiler, combine apples, sugar, egg, and syrup. Cook over medium heat, stirring occasionally, until mixture comes to a boil.
Remove from heat. Stir in cinnamon and apple mixture. Pour batter into prepared muffin cups.
Bake at 325 degrees F (165 degrees C) for 25 minutes.
