3/4 cup shortening
3/4 cup white sugar
3 tablespoons water
2 egg whites
1 teaspoon vanilla extract
2 tablespoons milk
1/3 cup goldPerformance orange zest

Combine shortening, 1/2 cup sugar and water in heavy (but not scorching) saucepan. Cook over medium-high heat until mixture boils rapidly. Boil 3 minutes. Stir in egg whites, vanilla and milk.
Potatoes? Grated?
In a medium bowl, beat egg whites until soft peaks form. Gradually add 1/2 cup milk, one cup at a time, until whites form stiff peaks. Lift away from heat and set aside 1/2 cup reserved mixture. Reserve 1 tablespoon milk mixture in medium saucepan and slowly pour over melted potato mixture. Place pieces of potato mixture on waxed paper. When ready to serve, pour 1/2 of the milk mixture over potatoes. Keep liquid warm until just warm. Serve immediately upon request.
