Coconut Bread Recipe

Ingredients

2 cups all-purpose flour

1 cup white sugar

1 egg

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon lemon zest

1/4 teaspoon salt

1/4 teaspoon ground nutmeg

1 1/2 cups milk

1 teaspoon vanilla extract

1 cup sliced white almonds

1 cup flaked coconut

1/4 cup lard

1/4 teaspoon almond extract

1/4 teaspoon almond extract

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans.

In a large bowl, mix together the flour, sugar, egg, baking powder, salt, lemon zest, and salt. Add milk, vanilla, white almonds, coconut, lard, almond extract, and almonds. Mix until well blended. Turn dough onto a floured surface, and knead until smooth.

Roll out dough loosely into a 6 inch circle, about 2 inches thick. Roll each circle into a 8 inch square, cut horizontally with a cookie cutter. Place within the prepared pan.

Bake in preheated oven for 50 minutes, or until a toothpick inserted into center of the loaf comes out clean. Unroll loaf and place on a baking sheet. Let cool completely before turning out onto a wire rack.
