1 (9 inch) glass pan
1 (3 ounce) package orange flavored Jell-O mix
1/2 cup boiling water
1/4 cup orange juice
1/4 cup lemon juice
1 teaspoon orange extract
1 teaspoon vanilla extract
1/2 cup chopped peaches
1 cup sliced fresh pineapple
2 eggs
1 1/2 cups vegetable oil
1 cup cooked pineapple, diced
1 cup chopped peaches
1 cup chopped pineapple, sliced
1 cup orange juice
1 cup pineapple juice
2 tablespoons lemon extract
1/4 cup peaches, pitted
1 cup apricot preserves
1 splash peach schnapps
In a medium saucepan, boil water and orange flavored gelatin until thickened. Remove from heat. Stir in boiling water and orange juice. Whisk blend of pineapple, peaches, pineapple, orange juice, lemon extract and peaches. Mix thoroughly until well blended.
Pour mixture into pie pan. Beat egg in large bowl until combined with pineapple mixture. Fold egg into pineapple mixture. Pour peaches over pie while still in pan. Sprinkle with pineapple mixture. Sprinkle with peach schnapps and peach preserves. Chill in refrigerator. Serve at room temperature or chill overnight. Garnish with peaches, pineapple creamers and apricot preserves.
