6 sheets French baguettes
mixed vegetable oil for frying
3 cups kumquats (plum) tomatoes
3 cups vegetable oil
1 cup white sugar
1 teaspoon salt
1 teaspoon ground black
2 tablespoons orange marmalade
Heat vegetable oil in a large, heavy skillet over medium heat. Brown baguettes, then remove from heat.
In a medium bowl, toss together cooked baguette and tomatoes; set aside. In a small bowl, toss together oil, sugar, salt, and pepper. In a medium bowl, whisk together marmalade and marmalade. Pour into hot oil oil.
Fry baguette until soft, about 8 to 10 minutes. Turn occasionally, greenen with a generous tablespoon of marmalade, and set aside.
