1/2 cup rolled oats
1/2 cup all-purpose flour
1/2 teaspoon salt
3 tablespoons butter, softened
1 egg, beaten
2 teaspoons white sugar
1/2 cup heavy cream
1/2 cup confectioners' sugar
1 tablespoon vodka
1/2 cup white sugar
1/2 teaspoon ground cinnamon
Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch jellyroll pan.
In a medium bowl, stir together the oats, flour and salt. In a separate bowl, stir together the butter, egg, and 2 teaspoons sugar. Pat the mixture evenly into the pan.
Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool before serving.
To make the topping: In a small bowl, combine 1/2 cup cream with 1/2 cup confectioners' sugar and 1/2 teaspoon of cinnamon. Fold in any excess.
