2 cups olive oil
1/2 cup cooked ham, diced
1 onion, diced
3 cloves garlic, minced
1 tablespoon finely chopped fresh parsley
1 tablespoon lemon juice
1 teaspoon paprika
1 teaspoon crushed red pepper
1 teaspoon dried oregano
1 teaspoon salt
1 (10 ounce) can garbanzo beans, drained
1 (8 ounce) container sour cream
1 (8 ounce) can cream cheese, softened
Heat olive oil in a large saucepan over medium heat. Place ham, onion and garlic in pan and cook and stir 3 minutes.
Stir chopped parsley, lemon juice, paprika, crushed red pepper, oregano, salt, garbanzo beans into pan. Simmer 40 minutes. Stir in garbanzo beans and sour cream. Continue simmering, stirring occasionally, until beans are tender.
Stir cream into ham mixture. Simmer 45 minutes. Stir in cream cheese until well blended.
