2 tablespoons olive oil
2 potatoes, peeled and cubed
2 green bell peppers, cubed
2 tomatoes, cubed
1 small garlic clove, sauteed
1 small fresh basil leaf, and nutmeg to taste
1 small carrot, sliced, and some fresh basil leaves
3 tablespoons curry paste
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 teaspoon ground cayenne pepper
1 (10.5 ounce) can tomato sauce
1/2 cup tomato paste
salt to taste
black pepper to taste
Heat olive oil in a large skillet over medium heat. Saute potatoes in cold, stirring occasionally, until golden; about 6 minutes. Stir in green peppers, tomatoes and garlic. Add basil, salt and cayenne pepper. Season with nutmeg, salt and pepper, and brown using a fork.
