1/3 cup long-grain white rice
1 cup milk
1 egg yolk
1/2 cup shortening
1/4 teaspoon salt
2 tablespoons butter, melted
1 teaspoon vanilla extract
3 tablespoons raspberries
3 drops red food coloring
1 1/2 cups scallions
4 tablespoons blueberries
1 cup crushed pineapple cocktail sauce
1/2 cup heavy whipping cream
1/2 cup freshly grated orange slice
Preheat oven to 350 degrees F (175 degrees C).
In a large mixing bowl combine rice, milk, egg yolk, shortening, salt, butter, and one teaspoon vanilla. Mix all together and form into patties, about 4 inches long.
Bake in preheated oven for 45 minutes, until crisp. Prepare dressing as needed for chicken and rice and serve with pineapple cocktail sauce.
