1 tablespoon olive oil
1 small onion, diced
1 green bell pepper, diced
1 (1 pound) whole chicken, cut into 1/2 inch cubes
1 large tomato, chopped
1 tablespoon garam masala
1 bay leaf
1 tablespoon fresh lemon juice
1 tablespoon dried basil
1 teaspoon salt
1 cup dry white wine
Heat the olive oil in a small saucepan over medium heat. Add onion and bell pepper and saute until very tender, 1 to 2 minutes.
Meanwhile, in a large pot over high heat, saute tomatoes in the same pan until tender, 2 minutes more. Add garam masala, bay leaf and lemon juice. Stir all together and cook until all the liquid is absorbed, stirring frequently.
Add more liquid if necessary. Season with salt, then reduce heat to low and simmer for 1 hour.
Add more wine if necessary.
