3/4 cup shortening
2 cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 cup buttermilk
1/2 cup unsalted butter, softened
1 teaspoon vanilla extract
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup crunchy peanut butter
Preheat oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
In a medium bowl, cream together the shortening, sugar, and eggs until smooth and creamy. Beat in the vanilla and buttermilk; stir in the buttermilk mixture. Combine the flour, baking powder, salt and baking soda; stir into the creamed mixture. Stir into the peanut butter. Drop dough by heaping spoonfuls onto the prepared cookie sheets, and spread them evenly.
Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
I gave this recipe four stars because it required some serious baking skill to make it to order (as in, I microwaved the cookies and mixed the frosting in, then baked them at 350 for 15 minutes). However, once they thawed, I used a small cookie scoop to drop onto a parchment lined baking sheet. I baked for 37 minutes, coming out of the oven on a crackly, chocolate cookie sheet. No one was hurt, and the house smelled wonderful while it was baking!!!
Made these cookies last week...got in early to get them in the oven...they baked perfectly!! I put the raisins in before baking...made a little cake add-in at the bottom as well. I had to bake for an extra 15-20 minutes at the end...made a little greek crumble to add some browning powder...yummy!! I will definitely make these over and over. Snow peas and carrots really add to this dish...[IF THE CORNER IS GARLICKOUS], you can probably get away with a baked potato or two in addition to the cookies! Snow peas also add a nice layer of texture to this dish...
I made these cookies last week...I didn't have dark chocolate chips...so I used a box of Ralphs chips... They were delicious... I must have spent quite a bit longer than stated because they are very dry, a bit tougher than I would have liked them to be, and have a tendency to fall apart under heavy coconut and sugared jello add-ins. Nevertheless, they are good nonetheless and worthy of 5 stars for structure and execution.
