1 teaspoon baking powder
1 teaspoon salt
1 cup dry bread crumbs
1/3 cup unsalted butter
1 (8 ounce) package thin sliced cornmeal
1/2 cup shredded Cheddar cheese
2 eggs, lightly beaten
4 teaspoons water
1 teaspoon butter
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a muffin pan.
In a small bowl, stir together the baking powder, salt and flour. Stir in the crumbs, cream cheese, eggs and water, until well blended. Transfer to the prepared pan.
Bake 20 to 25 minutes in the preheated oven, until a knife inserted in the middle comes out clean. Cool completely before serving.
