4 (1 ounce) squares confectioners' sugar
3 tablespoons unsalted butter, divided
1 egg
1 teaspoon vanilla extract
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
Sift together the flour, baking powder and salt. Set aside.
In a large bowl, cream together 3/4 cup of butter, 1 egg, and 1 vanilla until smooth. Beat in the remaining 1 cup of butter, eggs and vanilla. stir in the flour mixture just until combined. Fold in the remaining flour, one tablespoon at a time, beating well after each addition. Spread half of batter into the prepared pan.
Bake for 25 to 32 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool in the pan on wire rack. Cover with foil for the last few minutes. Serve warm or cold.
