2 limes, thinly sliced
1 cup white sugar
2 tablespoons unsalted oil, divided
1 teaspoon salt
1 teaspoon ground cumin
1/2 cup uncooked long-grain white rice
3 cups water
1 tablespoon dried parmesan cheese
5 teaspoons white wine vinegar
salt and pepper to taste
Bring a large pot of water to the boiling point. Saute lime juice and 1 cup, sugar in pan. Whisk in 3 tablespoons oil, and cook until sugar is dissolved; cool.
In bowl, whisk together 1 teaspoon of oil, 1/2 teaspoon of salt, 1 cup instant rice and 2 cups remaining amount of water. Stir in chicken, parmesan cheese, vinegar and seasoning salt. Transfer to a large, nonporous baking dish; chill for at least 15 minutes, stirring frequently.
