1 1/2 pounds zucchini
2 teaspoons salt
1/4 cup vegetable oil
1 cup milk
salt to taste
ground black pepper to taste
1 cup grated Parmesan cheese
2 egg whites
1 teaspoon vanilla extract
2 cups bread crumbs
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
Place zucchini in skillet, and cook over medium heat until tender. Drain, then stir vegetable oil into oil. Mix milk, salt, pepper, and salt, and pour into skillet, then stir until mixture thickens. Stir in pepper and bacon, and cook for 2 minutes. Stir in cream cheese, and cook for 1 minute. Stir in egg whites, and cook 3 minutes.
Pour egg mixture into skillet, and cook over medium-high heat until thick. Stir in some of the remaining garlic, pepper, and salt. Thin with bread crumbs.
Bake in preheated oven for 25 minutes, or until heated through and golden brown.
I found this recipe to be a tad bland but that's probably because I used store bought mayonnaise instead of sriracha. admits it was super easy but I thought the BBQ slaw was a tad bland so I added more hot sauce and some dried dill which worked out beautifully. will definitely make again.
