1/2 cup peanut butter
2 tablespoons low-fat dark chocolate chips
1 (8 ounce) package cream cheese, softened
1 (6 ounce) package instant vanilla pudding mix
1 teaspoon vanilla extract
1/2 cup water
1/3 cup packed light brown sugar
1/4 cup milk
In a medium saucepan, mix together peanut butter and dark chocolate chips. Place cream cheese in a small, shallow microwaveable bowl. Microwave on high for 1 minute. Stir and set aside. Whisk in pudding mix. Shake until smooth. In a small bowl, whisk 1/2 cup water from microwave bag into pudding mixture. Pour into prepared sandwich. Chill until set, about 1 hour.
To make pudding: In a large saucepan, combine milk and chocolate mixture. Heat over medium heat, stirring constantly, until smooth. Whisk in 1/2 cup of water and cook 1 minute. Stir in pudding mix and vanilla extract. Microwave at medium-low speed for 1 minute. Pour pudding mixture over peanut butter sandwich, refrigerate until set, about 3 hours.
