Pineapple Upside-Down Pie Recipe

Ingredients

1 (9 inch) pie crust, baked

1 egg, beaten

1 cup white sugar

1/2 cup water

1 (15 ounce) can crushed pineapple, with juice

1 (2 ounce) can frozen orange juice concentrate

1 cup flaked coconut

Directions

Preheat oven to 350 degrees F (175 degrees C) and grease and flour a 9x13 inch baking pan.

In a medium saucepan over medium heat, combine the egg, sugar, water, and pineapple. Bring to a boil then boil for 2 minutes, stirring occasionally. Reduce heat to medium and continue to boil, stirring frequently.

Remove from heat and stir in the pineapple and orange juice concentrate. Stir in the frozen orange juice, coconut. Pour into prepared pan and sprinkle with some of the reserved pineapple and coconut.

Bake in preheated oven for 30 to 35 minutes, until a toothpick inserted comes out clean. Cool before serving.

Let alone mythbusting. I'm baffled by the smoke flavor, since it does not explain the raised eyebrows of some people. I would expect sweetness from CP, not almost 100% fructose. I thought it was a bit bland so I choose not to use it. I plan on trying it with fresh orange zest next time, which could be delicious.
