1 cup vegetable oil
1 cup white sugar
2 teaspoons baking powder
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3/4 cup heavy cream
3/4 cup potato starch
1/2 cup dried bread cubes
1/4 cup butter, chilled
1 egg, beaten
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Preheat oven to 350 degrees F (175 degrees C).
When oil is heated in a large saucepan, stir in sugar. Stir in baking powder, salt and cinnamon and cook until mixture boils and thickens. Add cream and potatoes. Stir in bread cubes and butter.
Cook until mixture is thick and thick enough to coat the back of a metal spoon, about 15 minutes. Stir in egg and vanilla extract and cook until mixture thickens, stirring constantly. Stir in cinnamon and cooked potato. Pour into prepared dish.
Bake in preheated oven for 40 minutes. Cool completely before topping with whipped cream and decorating with icing!
