Mexican Cornbread Recipe

Ingredients

1 cup all-purpose flour

1 teaspoon salt

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1 egg

1 teaspoon cider vinegar

1 cup cornmeal

1 cup water

1 onion, chopped

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

3 teaspoons shredded Cheddar cheese

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease a 9x5 inch loaf pan.

In a large bowl, mix flour, salt, baking powder, baking soda and egg. Stir together cornmeal and water and mix into flour mixture. Mix in salt, vinegar, cornmeal, cornmeal mixture, onion, paprika and garlic powder. Roll dough into a square.

Bake in preheated oven for about 35 minutes. Remove paper from loaf pan and let cool completely on wire rack.

In a large saucepan, combine cornmeal, vinegar, Cheddar cheese and onion mixture. Bring mixture to a low heat and cook just until warmed through. Remove from heat. Cool completely, then slice loaf into 1 inch cubes.

I really enjoyed this recipe. I like green beans anyway, but it's nice to see how someone else prepares them. I used the whole young beans and real butter, but eliminated the lemon juice. As always with green beans, it's important to let the liquid cook away, putting the flavor back on the beans.
