2 tablespoons olive oil
1 tablespoon white wine vinegar
3 cloves garlic, finely chopped
2 tablespoons dried minced onion
3 slices fresh ginger root
4 celery stalks, finely chopped
2 1/2 teaspoons dried marjoram
1 teaspoon salt
1 teaspoon dried sage
2 teaspoons chopped fresh rosemary
2 tablespoons distilled white vinegar
2 tablespoons ketchup
In a medium saucepan, heat oil over medium heat. Add vinegar, garlic, onion, ginger, celery, marjoram and salt and sage to taste. Bring to a boil. Reduce heat to low. Cover and simmer 30 minutes, stirring occasionally, until vegetables are tender.
Stir ketchup into a medium bowl. Pour over chicken and vegetables. Cover and simmer 15 minutes more.
