14 (6 inch) flour tortillas
1 cup extra-virgin olive oil, divided
2 cups Cheddar cheese, cubed
1 onion, finely chopped
2 tomatoes, diced
1 sweet pickle (optional)
1/2 cup unsalted butter
Divide 1/2 cup each of flour, onion, tomato and pickle into 8 small, shallow bowls. In a medium bowl, mix together the butter and oil.
Preheat oven to 350 degrees F (175 degrees C).
Place 2 tortillas in a lightly greased 9x13 inch baking dish and pour vegetable oil on the outside of the bowls.
Bake 5 hours in the preheated oven, or until the cheese is melted.
