2 eggs
1/4 cup margarine
1/2 teaspoon baking soda
3/4 cup flaked coconut
1 teaspoon vanilla extract
1/2 cup almonds
1 (6 ounce) package cream cheese, softened
1/2 cup shortening
1 (10 ounce) package frozen whipped topping, thawed
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan and set aside.
In a large bowl, beat eggs and margarine together. Mix coconut, vanilla, almonds and whipped topping, stirring thoroughly. Pour mixture over eggs and margarine mixture.
Bake in preheated oven for 1 hour or until egg mixture is set. Remove pan from oven and cool. Chill egg mixture on wire rack.
