1/4 cup butter
1 2/3 cups white sugar
1 1/2 teaspoons salt
1 egg
1 teaspoon vanilla extract
1/4 teaspoon hot water
1 (9 ounce) package cream cheese, softened
In a medium glass bowl, cream together the butter and sugar until light and fluffy. Stir in the salt and egg. Mix in the vanilla and hot water until creamy. Pour cream into the bowl and spread into 2 inch squares. Store in an airtight container.

1/2 cup margarine
1 tablespoon cocoa powder
1 cup white sugar
1 egg
2 tablespoons cornstarch
1 cup corn syrup
2 eggs
1 cup milk
2 teaspoons vanilla extract
1 teaspoon baking soda
1/2 teaspoon almond extract
1 cup chopped pecans
1/2 cup chopped pecans
2 1/2 cups chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 12-inch medium baking pans.
In a large saucepan, cut butter into margarine. Beat in cocoa, sugar, egg, corn syrup, eggs and milk. Stir over medium heat for 1 to melt butter. When butter has melted, pour mixture into the prepared pans.
In a large bowl, beat cream cheese until smooth and fluffy, then fold in pecans. Mix in slightly. Spread mixture over pecans. Roll existing pecans into tamales. Spread pecans into cream cheese mixture.
Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely, then refrigerate for at least 2 hours. Cream pecans. Slice pecans into thin slices. Warm and remove skin of pecans.
Stir cream cheese mixture into cake pan, then whisk cream cheese mixture into cake. Sprinkle remaining pecans over top. Refrigerate 15 hours or overnight.
This was Excellent and very different--I usually don't like processed sugars, but something about the flavor was appealing. I used Plain Old Betty's powdered sugar mix and it worked very well. I will definately make this again.
