1 tablespoon butter or margarine
1/4 cup diced onion
1 teaspoon salt
6 slices fajita-style sushi rice
2 tablespoons smoked Maryland or Deli or other Italian-style crushed red pepper flakes, to taste
2 1/2 ounces trimmed sharp Cheddar cheese
2 eggs, beaten
salt to taste
ground black pepper to taste
In a large pan, butter the onion, salt, and fajitas so that they are quite brown; drain off water.
In a large bowl, mix butter, celery, onion, salt, pepper flakes, cheese, eggs, salt, pepper flakes, and salt. Cover, and set aside.
In a medium skillet over medium heat, melt butter to about 2 / 3 cup. Add fajita rice, juice, and salt/black pepper; stir until sauces are completely coated and rice is cooked into the crisp side of golden brown. Quickly sauce this mixture over low heat; serve over rice.
