Light Creamy Potato Soup Recipe

Ingredients

1 (6 ounce) package frozen mixed vegetables

1 cup beef broth

2 onions, minced

1 cup frozen sweet potatoes, diced

salt and pepper to taste

1 pint heavy cream

1 (12 fluid ounce) can condensed milk

1 (8 ounce) can frozen chopped spinach

1/3 cup shredded Cheddar cheese

Directions

Place vegetables in a large saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let vegetables boil for 3 to 5 minutes. Drain and cool.

In a stockpot or large soup pot, combine vegetable broth and onion, potatoes and cream. Season with salt and pepper, and heat through. Once hot, transfer mixture to a slow cooker set to simmer. Serve over hot soup.
