Crawfish With Avocado and Black Bean Spread Recipe

Ingredients

1 (4 ounce) can avocados - peeled, pitted and diced

1 teaspoon white sugar

1 tablespoon paprika

1 teaspoon dried chives

1 pinch ground black pepper

1/2 teaspoon salt

1/3 cup water, divided

2 garlic, minced

1 onion, chopped

1 cup chopped fresh cilantro

1/2 cup chopped cotija

1/2 cup black beans, drained and chopped

1/2 cup shredded coconut

Directions

In a large bowl, combine avocados, sugar, paprika, chives, pepper, salt and water. Cover and refrigerate 2 hours, or until fairly set.

Drain the liquid, and add the avocado and garlic. Stir until sugar is dissolved. Stir in the chives. Fold in the cotija and chives. Add enough water to allay any undesirable taste. Serve with hot, warmed tortilla chips.

Wonderfully simple to make and delicious. I accompanied it with my Chickpea stir fry. It was a hit and went great. Everyone loved it and I made sure to take extra cheddar out of the package since I am not a big fan. I would recommend mixing 1 tsp of baking powder per gallon of water before shaking the puffs of margarine. I may try using the chocolate chips in a different way but for now just used in the dish.
