5 cups Christmas sweet potatoes
1 avocado, peeled, pitted and diced
4 swiss cheese, cubed
1/2 cup white wine
1 cup balsamic vinegar
2 teaspoons lemon juice
1 tablespoon grated lime zest
3 tablespoons chili powder
Bring a large pot of water to a boil. Place sweet potatoes in boiling water for 2 minutes, then immediately cut and peel and puree.
Mix warm water with 1/2 cup mashed potatoes; allow mixture to boil and boil for 3 to 5 minutes. Press mash potatoes on a 2 quart dish or, if necessary, refrigerate.
Transfer the pureed mixture to a 1 quart blender and blend until smooth; set aside. In a medium bowl, cream together the avocado, cheese and vinegar. Stir in 1 lemon squeeze of lime juice, 1 tablespoon lime rind and 1 tablespoon chili powder. Pour mixture over mashed potatoes and bake in preheated oven for 30 minutes or until slightly browned.
