Lemon Pecan Pie Recipe

Ingredients

1 (9 inch) prepared jellyroll dough recipe

2 eggs, beaten

1 1/2 cups frozen chopped pecans

1 teaspoon grated lemon peel

Directions

Preheat oven to 230 degrees F (100 degrees C).

In a large bowl, combine boiled eggs and pecans. Form covered springform pan into three 10-inch loaves. Set aside.

In a saucepan, heat remaining 1/2 cup boiling water. Stir in beaten egg substitute, lemon peel, and lemon juice (if desired). Cook, stirring constantly until ready to stir in heavy cream and other warm liquids.

Pour batter into prepared pan. Bake in preheated oven for 25 minutes. Cool completely, then remove from oven and dig into center of pie to prepare centre pie shell.
