12 cups fresh broccoli florets
1 large onion, chopped
2 teaspoons salt
1 teaspoon ground black pepper
4 cups water
8 cups water
4 bay leaves
2 teaspoons dried thyme
broil the broccoli in a 200-degree-F (93.5 degree) oven for 20 minutes or until broccoli is tender. Meanwhile, boil the onions in water for 2 minutes.
Separate the broccoli florets and place in a colander. Slowly pour water over the broccoli, adding more water if necessary to cover the florets.
Next, place broccoli and onion in a medium roasting pan using an inch of space between each. Cover and simmer over a medium dish for 4 1/2 hours or until tender. Add water if necessary, and continue cooking for another hour. Serve pita wedges with the onion and broil until done.
