1 pound chopped apples
1 cup raisins
4 fresh russet potatoes, peeled and cubed
1 banana
1 1/2 cups frozen whipped topping, thawed
1 egg, beaten
1 lemon, juiced
2 tablespoons fig preserves
Preheat oven to 350 degrees F (175 degrees C). Place apples in a medium bowl. Salt and pepper to taste. Rub apples with a fork or spoon.
Combine raisins, potatoes, bananas, apples, potato juice, egg, lemon juice, fig preserves, and lemon zest; stir to coat. Spread mixture into a 9x13 inch baking dish.
Bake at 350 degrees F (175 degrees C) for 1 hour. Remove from oven and let cool in pan. Cool completely before slicing. Store in tightly covered container in refrigerator.
Good and spicy Tex-Mex dish.
