This is lovely meat! A good way to soften up stews before heading to the dehydrator. I worked with a bit of flank steak and it was delicious. Worked perfectly.....I did NOT nail the rare steak though......so expensive that I would have thought. But others have not been so lucky. However, my local is very good and they recommend talking to the cook first before cooking. Hopefully this helps someone!
