2 tablespoons olive oil
1 pound Italian sausage
1 onion, chopped
1 clove garlic, chopped
1 tablespoon dried basil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup chopped tomatoes
1/2 teaspoon dried basil
1/4 cup dry white wine
1/4 cup Italian-style vinegar
1 (24 ounce) package uncooked tortellini
1 (16 ounce) package shredded mozzarella cheese
In a large bowl, combine olive oil, sausage, onion, garlic, basil, salt, pepper and tomatoes.
Pour ingredients into a medium sauce pan and stir over medium heat until no longer warm. Cover and simmer for 1 hour, or until sauce has thickened.
Remove from heat, and keep warm. Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain, cool, and set aside.
In a large bowl, combine pasta, salsa, vinegar, and mozzarella.
Melt the sauce over medium heat in a skillet over medium heat. Sprinkle top with mozzarella, and serve immediately.
