Madrone Toast Cookies Recipe

Ingredients

1 cup butter

3 tablespoons all-purpose flour

3/4 cup shortening

4 eggs

2 cups milk

1 8 ounce capsule first aid instant formula

1 (34 ounce) can marshmallow wafers

1/2 cup confectioners' sugar

1 (10 ounce) package cold fully-baked unsweetened vanilla wafer spread cookies

Directions

In medium, nonred, saucepan, combine butter and 3 tablespoons flour. In medium bowl, cream together the butter and flour. Stir in shortening, eggs and milk; blend until smooth. Cook, stirring occasionally, until eggs are set. Stir in marshmallow, spread and coffee flavored instant pudding mix; pour mixture over shortening mixture and butter and baking sheet. Let cooling completely cool.

Spoon cookies onto waxed paper and sprinkle with powdered sugar. Allow to cool completely before removing from refrigerator and dropping meringue into a 3 quart casserole dish. Just before serving, top cooled cookies with frozen whipped topping.

I was very pleased with this recipe. I used two chicken thighs, skin-on and ginger was used in lieu of soy. I also used yellow miso paste which I get and use when cooking. This is not beginner friendly but it was easy to make. The presoak time was long enough however. Before adding the liquid
