1/2 cup butter
1 cup white sugar
1 teaspoon salt
1/3 cup light brown sugar
2 eggs
1 (8 ounce) package cream cheese, softened
1 (10 ounce) jar shredded mozzarella cheese
2 cups cooked, ripe tomatoes
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the brown sugar and eggs. Stir in the cream cheese and mozzarella cheese.
Fill a greased and floured 6x8 inch baking dish with boiling water. Bake in the preheated oven for 60 minutes, or until a knife inserted into the center comes out clean. Cool before serving.
