1/3 cup frozen and thawed Brussels sprouts
1 cup week-old bread cubes
1 tablespoon salt
1/2 cup vegetable oil, divided
1 onion, pared and minced
8 green bell peppers
8 cloves garlic, crushed
2 tablespoons olive oil
1 tablespoon dried basil
1 tablespoon dried oregano
salt to taste
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, combine Brussels sprouts, bread cubes, salt, oil and basil. Stir well and set aside.
Saute onion and peppers until tender. Stir in garlic and olive oil, stir until the onions are evenly coated with oil. Stir in the Brussels sprouts and season with salt and pepper. Pour over the vegetables, pour egg mixture over, and bake 45 minutes, turning the broiler occasionally.
