Cinnamon Swirl Glazed Carrots Recipe

Ingredients

4 medium carrots

1 teaspoon orange zest

1 teaspoon grated orange zest

1 teaspoon lemon juice

1 (27 ounce) can stewed tomatoes

1 cup water

Directions

Remove stems from carrots. Stir in orange peel, lemon juice and orange juice. Simmer all together, uncovered, for 1 hour.

Preheat oven broiler and lightly grease a 13x9x2 glass baking dish. Drain carrots and stock, and set aside in oven. Place tomatoes in sauce, and stock, carrots, water and tomato mixture in pot. Cook on low, stirring occasionally, until potatoes are tender. Transfer to sauce pot, cover and set aside.

Heat oil in pan over medium high heat. Add carrots, tomato sauce and water, and continue cooking until vegetables begin to sputter, 5 minutes. Remove pot from heat and simmer until carrots are tender, 15 to 20 minutes. Serve well.

This was pretty good, but the shrimp and spinach definitely need some seasoning. We're planning on making this again--a hearty, hearty meal!
