1 quart milk
4 eggs
1/2 teaspoon salt
2 teaspoons vanilla extract
1/4 cup coconut milk
3/4 cup pea-sized chunks of coconut
3/4 teaspoon ground nutmeg
1/4 teaspoon ground white sugar
1/4 cup chopped pecans
Place milk, eggs, and salt in a 7-quart saucepan. Cook over medium heat, stirring constantly until mixture boils slightly. Remove from heat and stir in raisins, coconut milk, nutmeg, white sugar, and pecans, stirring until smooth.
Whisk in pudding mixture, and proceed to heat through in oven. Cover, and bake in the preheated oven for 25 to 30 minutes, or until a knife inserted into center comes out clean.
