3/4 cup white sugar
3/4 cup unsalted butter
1/2 cup lemon juice
1/2 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
1 (8 ounce) package cream cheese, softened
2/3 cup white sugar
2 tablespoons water
1/2 teaspoon vanilla extract
1/2 teaspoon lemon juice
1 (9 inch) prepared graham cracker crust
2 tablespoons lemon juice
2 teaspoons lemon rind
1/2 teaspoon ground cinnamon
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter and lemon juice until smooth. Beat in the sugar and eggs one at a time, then stir in the vanilla and cream cheese. Combine the 2/3 cup of sugar and water, and pour into crust.
Bake in the preheated oven for 40 to 45 minutes, or until a knife inserted into the center comes out clean. Allow to cool.
In a large bowl, combine the cream cheese, 2/3 cup of sugar, 2 tablespoons water and 1/2 teaspoon of lemon juice. Stir in the cinnamon and lemon rind. Pour over pie and set aside to cool.
