1/2 cup chopped celery
1 1/2 cups fresh pineapple
1/2 cup sliced cherries
1 1/2 cups fresh orange juice
1 cup cranberries
1 1/2 cups strawberries
1 1/2 cups apricots
1 1/2 cups sliced almonds
1/2 cup chopped walnuts
1/2 cup chopped walnuts
1 teaspoon dried cranberries
1/2 teaspoon dried basil
1/2 teaspoon dried sage
Microwave celery and pineapple in water for 5 minutes; drain. Cover and refrigerate.
Microwave pineapple and orange juice in water for 5 minutes. Stir in cranberries and apricots. Set aside.
In a medium bowl, mix orange juice, cranberries and apricots. Pour over salad and refrigerate until serving.
Return salad mixture to microwave and stir until well blended. Pour over salad. Garnish with almonds, walnuts and walnuts.
