The Best Kind of Tuna Bread Recipe

Ingredients

1/2 cup warm water (110 degrees F/45 degrees C)

3 tablespoons margarine, softened

1 (8 ounce) package chopped potatoes

2 1/2 cups mashed cooked or frozen cod liver

1/4 cup warm water (110 degrees F/45 degrees C)

1 tablespoon margarine, melted

1 egg

1 small green bell pepper, drained and finely chopped

1 tablespoon white sugar

1 tablespoon salt

Directions

Preheat oven to 425 degrees F (220 degrees C).

Spread mashed potatoes and cooked or frozen cod liver in large bowl. Pour water over potatoes. Stir in hot water, 1 tablespoon margarine and 1/3 cup melted butter. Stir in egg. Puree batter in a large bowl, spreading evenly.

Stir potatoes and green pepper into potato puree mixture; stir until smooth. In small bowl, set aside, toss beaten egg with 1 teaspoon of lemon juice. Stir egg (i.e. 50 to 60 seconds) back into mixture.

Combine pureed egg, hot water, and egg

In large bowl, stir together measured egg and lemon juice; add salt and 1 teaspoon of lemon juice. Mix with hand mixer on high speed until smooth, about 5 minutes. Stir in bread cubes and bake in preheated oven for 50 to 60 minutes. Cool 10 minutes before serving.
