Mistletoe Cake Recipe

Ingredients

5 eggs

1/2 cup vegetable oil

3 tablespoons white sugar

1 (16 ounce) can milk

1/2 cup butter, softened

1 cup packed light brown sugar

2 teaspoons vanilla extract

1 teaspoon vanilla extract, divided

2 (6 ounce) packages cream cheese, softened

1 1/2 cups white sugar

1 cup milk

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 2/3 cups (2-3) pans.

In a large bowl, beat egg whites until foamy. Beat in oil, 1 cup at a time, until mixture is smooth. Beat in 1/2 cup butter, lightly beating frequently, until mixture is light and creamy. Beat in brown sugar alternately with vanilla. Stir in light brown sugar.

Stir in milk.

Pour batter into prepared pans. Bake in preheated oven for 40 minutes. Cool completely.

I made this for dinner and I must say it was very good! I cooked asparagus on the grill so it was not exactly what I expected but it was very close. Heated 4 ounces of raw ground beef, onion, and pepper with 4 ounces of the sauce and then placed on the grill. I had previously purchased certain brands of relish but did not have the meat. This was a great compromise! I will make this again.
