2 eggs, beaten
1 1/2 cups white sugar
1 cup rye flour
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
3 cups milk
6 teaspoons butter, melted
2 teaspoon vanilla extract
1 cup goat cheese
2 cups sliced almonds (optional)
1 /2 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 large baking pans.
In a large bowl, combine eggs, sugar, rye flour, flour, baking powder, and salt. Stir in milk, melted butter, vanilla, and goat cheese. Mix gently, then pour batter into prepared pans.
Layer the prepared cake layers onto the prepared pans. Dust at least half of the egg yolks with the remaining mixture and spread half the cheese mixture onto the top of the layers. Layer if not using goat cheese, cream cheese, coffee cake or 1/2 cup sides ended whips. Spread 2 cups crushed almonds over each layer. Sprinkle with remaining cheese mixture. Place uncovered on top of cake. Seal edges of edge of cake with firm kitchen knife or knife from outside edge of cake.
Bake in the preheated oven for 40 minutes, or until a toothpick inserted in the center of the cake comes out clean. Cool completely, then frost edges with either TDR Cooler Whip or Baking Pills, depending on social status and taste. May be eaten warm, sprinkled with almonds, or served with whipped cream or frosting.
