1 tablespoon vegetable oil
2 onions, finely chopped
1 teaspoon garlic salt
3 carrots, finely chopped
1 1/2 cups water
1 1/2 cups sliced fresh mushrooms
1 (14.5 ounce) can mushrooms, drained
1 (10 ounce) can mushrooms with liquid
1 cup all-purpose flour
salt and pepper to taste
1 (10 ounce) package shredded sharp Cheddar cheese
Heat oil in a large pot over high heat. Saute onion, garlic salt, carrots and water for 5 minutes. Stir in mushrooms and mushrooms with liquid. Bring to a boil, reduce heat and simmer for 5 minutes. Stir in Cheddar cheese. Cover and simmer for 2 minutes.
Reduce heat to medium-low, and add the flour and salt and pepper to taste. Reduce heat to low, and simmer for 15 minutes.
