2 tablespoons vegetable oil
2 tablespoons garlic powder
2 tablespoons dried minced onion
2 tablespoons dried minced fresh ginger root
2 tablespoons dried bay leaf
1/4 teaspoon salt
1/2 teaspoon paprika
1/8 teaspoon dried oregano
1/8 teaspoon ground black pepper
1 pound skinless, boneless chicken
In a medium saucepan put oil in a large saucepan. Bring to a boil. Reduce heat to low, and cook, stirring occasionally, for about 1 minute; remove from heat. Stir garlic powder, onion, ginger, bay leaf, salt, paprika, oregano, and pepper into saucepan. Heat, stirring, over medium heat for about 1 minute. Remove from heat; stir in chicken. Transfer chicken to saucepan.
Return chicken to saucepan. Place chicken over saucepan, browning well on both sides. Add water, if necessary, to cover. Bring to a boil, reduce heat, and simmer for 5 minutes.
Remove chicken from saucepan and place on plates. Lower heat to low; cover, and simmer for another 5 minutes. Remove the chicken and shred using a knife. Transfer to a serving platter.
