2 tablespoons vegetable oil
1 large onion, chopped
2 large carrots, finely chopped
1 cup chicken broth
2 (2 ounce) cans chicken gravy
1 teaspoon Creole seasoning
8 cubes chicken bouillon
4 slices white bread, cubed
Heat oil in a large skillet over medium heat. Saute onion and carrots until tender. Add broth, chicken and gravy while stirring. Reduce heat; cook, stirring occasionally, until gravy thickens. Stir in creole seasoning.
Stir chicken into creole mixture. Cover and simmer for 1 hour.
Place bread cubes in a large baking dish. Spoon chicken mixture over bread and sprinkle with Creole seasoning. Repeat with remaining ingredients. Cover and simmer for 30 minutes.
