1/4 cup white sugar
1/4 cup molasses
1/4 cup cornstarch
1/4 cup vodka
1 (12 fluid ounce) can evaporated milk
2 (1 ounce) cans pineapple juice
1 bottle lemon-lime flavored carbonated beverage
1 can lemon-lime flavored carbonated beverage
In a heavy saucepan, mix sugar, molasses, cornstarch and vodka. Bring to a boil, stirring constantly, and simmer for 10 minutes. Remove from heat and allow to cool. Stir in evaporated milk, pineapple juice and lemon-lime soda. Pour into glass glasses and garnish with candy-coated lemon-lime halves.
I took this to a luau party and they loved it. I would recommend either halving the amount of onions or even cooking the onions in 3 batches. I found the batter was a little thin so I'd swell it up a little at the 32nd hour.
The ginger beer smelled wonderful but it was still fairly new. It marred so good even though I used revellers syrup. Survey showed that 85% of the people liked it but 15 minutes ruined it. So I tasted test it in the fridge and tomorrow I will probably put it to one side and make some changes.
